Smoky Rosemary Spiced Nuts

I adapted this from a NYT Cooking recipe when I wanted to make some fancy nuts for a holiday party — but I wanted them to be refined sugar free, dairy free, and a little smoky!
These nuts are gluten-free, dairy-free, and refined sugar-free — perfect for anyone navigating dietary restrictions without sacrificing flavor. Sprouted nuts are a great option if you have trouble digesting legumes.

Ingredients
- •1 lb unsalted mixed fancy nuts (sprouted if you have trouble digesting legumes)
- •1 tbsp melted vegan butter (Miyoko's recommended) or coconut oil
- •4 tbsp fresh rosemary, chopped (or 4 tsp dried)
- •1 tbsp maple syrup or honey
- •½–1 tsp chipotle chili powder (based on desired spice level)
- •1 tbsp pink Himalayan sea salt
Instructions

Mix melted vegan butter and nuts together and spread on a baking sheet.

Roast at 350°F for 7–10 minutes.

Mix the rest of the ingredients in a small bowl.

Toss the warm nuts with the herbs and spices in a large bowl and enjoy!
