Ingredients

  • 1 cup gluten-free organic oats
  • ½ cup oat flour
  • ¼ cup almond flour
  • ~2 tsp pumpkin pie spice (measure with your heart)
  • 1½ tsp baking powder
  • Pinch of salt
  • 2 tbsp melted coconut oil
  • ¾ cup organic pumpkin purée
  • 1 tsp vanilla extract
  • ½ cup organic maple syrup
  • A handful of vegan dark chocolate chips (Hu Kitchen recommended)
  • A handful of walnuts or pecans

Instructions
