Miso Caesar Dressing

I love a Caesar salad so much. This is the perfect tangy, light dressing — and it can easily be made vegan.
Miso adds gut-friendly probiotics and deep umami flavor to this lighter take on a classic Caesar. Use half a garlic clove or swap for garlic-infused olive oil to keep it low FODMAP and safe for IBS and SIBO protocols.

Ingredients
- •¼ cup mayo (made with olive or avocado oil) or Greek yogurt
- •2 tbsp miso paste
- •Juice of 1 lemon
- •1 tsp Dijon mustard
- •2 tbsp Worcestershire sauce
- •½ garlic clove (or use garlic-infused oil for low FODMAP)
- •1 tsp salt
- •Freshly ground black pepper, to taste
- •2–3 tbsp olive oil
- •¼ cup Parmesan cheese (skip if vegan)
Instructions

Mix everything together except the olive oil.

Drizzle in olive oil while whisking until you reach desired consistency.

Add Parmesan to your liking, or skip if vegan.

Toss with crunchy lettuce and your favorite toppings. Great with grilled chicken, capers, and fresh herbs.
