Miso Caesar Dressing
I love a Caesar Salad so dang much. This is the perfect tangy light dressing and can easily be made vegan.
Dressing:
1/4 c Mayo (choose one made with olive oil or avocado oil) or Greek yogurt
2 tbs of miso paste
Juice of one lemon
1 tsp Dijon mustard
2 tbs Worcestershire
1/2 garlic clove (or use garlic infused oil)
1 tsp salt
Couple cracks of black pepper
2-3 tbs of olive oil
1/4c Parmesan cheese
Mix everything except the olive oil together then drizzle oil in while whisking until you get the consistency you want. Add parmesan to your liking, or skip if vegan. Toss with crunchy lettuce and top with your faves. I added grilled chicken, capers and herbs.
