Lemon Blueberry Paleo Cobbler

Get yourself some fresh blueberries and make this ASAP! This one is super nostalgic for me ��� my mom always makes delicious cobblers every summer. It brings me joy to make healthier versions of old favorites.
This cobbler is paleo, vegan, gluten-free, and refined sugar-free — sweetened only with maple syrup and naturally thickened with arrowroot. A beautiful gut-friendly dessert for anyone avoiding gluten or dairy.

Ingredients
Filling
- •2 pints fresh blueberries
- •Juice of 1 lemon
- •2 tbsp arrowroot flour
- •¼ cup maple syrup
Topping
- •1 cup almond flour
- •½ cup oat flour
- •½ cup arrowroot flour
- •1 tsp baking powder
- •2 pinches sea salt
- •¼ cup coconut sugar
- •1 tsp vanilla
- •¼ cup coconut oil, not melted

Preheat oven to 375°F. Grease a 9x9 pan with coconut oil.

Mix all filling ingredients together and set aside.

Mix all dry topping ingredients together.

Cut in the coconut oil until the mixture resembles wet sand, then stir in the vanilla.

Pour the filling into the prepared pan.

Dollop the topping over the filling.
